Meet the Beaver Behind the Meat

Pat Goins didn’t set out to be a BBQ hero. He just got real tired of dry ribs, bland brisket, and the sad little squirt of sauce some places try to pass off as flavor. So he did what any meat-loving madman would do — he bought a food truck, fired up the smoker, and followed his dream of feeding Palatka, Florida the kind of BBQ that makes your eyes roll back in your head and your napkins beg for mercy.

Pat’s been chasing bold flavor, perfect bark, and juicy meat for years. What started as backyard experiments (and more than a few scorched eyebrows) turned into a full-blown mission: to serve up food so damn good, it ends up all over your face.
